Spinach-Artichoke-Tomato Salad w/ Orange Dressing

1 bag (or several plants' worth) spinach leaves, washed and torn
1 tomato, sliced into chunks
10-15 artichoke hearts, drained

Put all ingredients in a bowl and toss to combine.

Dressing
4 Tbsp orange juice
1 Tbsp honey mustard
1 Tbsp olive oil

Whisk all ingredients together and serve on the side, so each diner can dress her own salad.
